Recipes from January 2007 Basket of the Month Heirloom Apple Sauce 8-10 apple cored and cut apples -in 3rds Poach apple in 1\2 cup water till au dente' (in between crisp/ soft) When soften use a purée for apples Top with a sprinkle of cinnamon and nutmeg Chill and serve.
Herb Infused Marinara Portion is for family of 4- half recipe for dinner of 2 6- Roma diced 8- Tomatoes 1\2 cup fresh rosemary I-bunch fresh tarragon chopped 2-tbsp Infused tarragon vinegar 2- bunch of flat leaf parsley 1\2- cup water 2 1\2 cup basil chopped 2 tbsp of cumin 2 1\2 tbsp of minced garlic. My process for this recipe is very simple. I added my vinegar to my pot and have the heat on mid-range. Not boiling but add a hot temperature, add all of your tomatoes. Let them cook for about 3 minutes add your fresh herbs add seasoning. let this stew for 30 minute. Next step is blending. A food processor is great for this. After stewing carefully transfer your sauce to the processor, blend, then add the juice in the pan to reach the acquired texture. Ready to serve.
